Winemaking Notes:
After a mild growing season, the harvest started a bit later than average with great weather condition. All the white varieties were allowed the best ripening time and could be harvested at the peak of their flavours.
This Sauvignon Blanc is a blend of our best Margaret River blocks for the year: about 70% from our Wilyabrup property and about 30% of our Karridale property. The Wilyabrup Sauvignon is planted East-West by the property dam and cane pruned. It yields moderately and ripens slowly due to cool nights and foggy mornings by our dam. This batch was picked on the 3rd of March while the fruit displayed intense tropical characters. The Karridale Sauvignon is oriented North-South on a slightly South facing slope. The fruit is exposed to the sun by several leaf plucking passes through the season to ensure even ripening while very cool nights preserve the crisp acidity all the way to the harvest.
This batch was also picked on the night of March 3rd and added to the blend to provide refined focus and length. Both batches were picked on the same night and rushed to the winery for pressing while cold. Pressing was complete by 7am the next morning and the juice was racked off the majority of its solids, leaving some fine lees to bring texture to the ferment. Fermentation was long and cool, around 12c, to preserve all the fine fruit aromas. The wine was left to mature sur lees for about 3 months then filtered and bottled in the early winter.

Contains Sulphites. Fined with the aid of egg and skim milk products. Traces may remain.
Nose:
Intense aromas of lemon and limes generating a unique freshness with tropical notes of passion fruit and honey drew melons.
Palate:
Vibrant and bright with juicy lemon, limes and passion fruit with hints of spice and mint. While the length is accentuated by minerality and is lively and fresh on the finish.
Food Pairing:
Serve slightly chilled with roasted Artichoke salad with lemon and mint dressing.
