Wine Making Notes:
Harvest presented the ideal conditions for rose winemaking with moderate temperatures slowing red tannins development while developing intense fruit aromas and preserving floral notes. For our Rose, we focus our sourcing from the southern, cooler parts of Margaret River that produce delicate, ethereal Shiraz. For this harvest, we blended a batch of the rare Muscat a petit grains rouge to add to the complexity and uniqueness of our rose.
The grapes were lightly pressed to achieve the perfect delicate colour and preserve the fruit intensity. The batches are then slowly fermented in stainless steel vessels at a cool temperature (12 to 14c) to preserve fruit aromas and freshness. After careful selection, the final blend is assembled and lightly fined before bottling.

Nose:
Enticing aromas of strawberries, musk sticks and rose petals.
Palate:
The palate is succulent with fresh juicy wild berries and fruits of the forest these are accentuated with a baking spice note. The lovely crisp and dry finish retains the vinosity and character of the red varieties used in the blend.
Food Pairing:
Grilled Marron with lime and herb butter atop a fennel salad.
