Wine Making Notes:
Harvest 2021 presented the ideal conditions for rose winemaking in the southern parts of the state with moderate temperatures slowing red tannins development while developing intense fruit aromas and preserving floral notes. For this Rose, we focused our 2021 sourcing on cool parts of the Margaret River region which produce delicate red grapes able to be picked with full fruit expression while remaining light and ethereal.
The selected parcels were harvested in the cool of the night to retain freshness, and acidity. The grapes were lightly pressed to achieve the perfect delicate colour and preserve the fruit intensity. The batches are then slowly fermented in stainless steel vessels at a cold temperature to preserve fruit aromas and freshness. After careful selection, the final blend is assembled and lightly fined before bottling.

Nose:
Bright and fresh notes of wild berries. Nuances of rose water and pink marshmallow.
Palate:
A succulent palate of juicy red fruit with cherries and plums. A bright citrus laced acidity provides excellent length and freshness with a fruit laced finish.
Food Pairing:
Enjoy with a Charcuterie board of salted and cured meats and a mix of soft and hard cheeses.
